Lava Flow Smoothie

Today I get to share a new find with you. I love starting my day with a smoothie so when the folks from Visalus asked me to develop a recipe around their protein powder I had to say yes. Several of my friends have lost weight on the Body by Vi program so I was curious. The shake tastes amazing. I had the Sweet Cream Protein Powder sent to me. It tastes like frozen yogurt. Mixed with fruit and almond or coconut milk it makes a delicious shake.

Maybe it’s my wishful thinking but I decided to make a Lava Flow Protein Shake. When I think of Lava Flow’s I think of sweet drinks on a beach in Maui. Food transports us to other places and times. I have only been to Hawaii once, many years ago, but it was beautiful and relaxing. At the time I was in a high stress crazy job. My friend and I decided to fly over there for a long weekend. Crazy. She had connections and we scored a room at the Ritz Carlton Maui.

The first day we were still a little high-strung and I remember us driving through this parking structure. I don’t remember why but my friend bit the head off of the attendant. As we drove away there was this sense of contrast between this laid back place and our crazy driven lives back home. The first drink we had on our trip was a lava flow. As we sat and tried to kick off the stress we sipped and watched the sunset. Now my friend lives in Dallas with her husband and kids but we still laugh about that day!

A lava flow is a pina colada nestled in a puree of strawberries. It is bright red and white. I think it would be the perfect start to your Fourth of July.

Puree strawberries with a little Stevia. Pour in a glass and swirl around.

Mix together the remaining ingredients.

Lava Flow Smoothie

Recreate a popular Hawaiian drink in a tasty protein smoothie with pineapple, coconut and strawberries.

Total Time 10 minutes

Ingredients

  • 1/2 cup strawberries
  • 1 teaspoon stevia
  • 1 tablespoon water
  • 1/2 cup coconut milk
  • 1/2 cup pineapple
  • 1 scoop protein powder
  • 1 teaspoon rum extract

Instructions

  1. Puree strawberries with stevia and water. Add more a little more water if necessary. Pour into a glass and swirl around to cover half the glass.
  2. Place coconut milk, pineapple, protein powder and rum extract with a few ice cubes. Puree and pour into the glass.
  3. Top with a strawberry for presentation.
